Ingredients:
Rice – 2 cups
White Channa (Kondai kadalai) – 1 Cup
Aloo – 1 Cup (cut into cubes)
Bay leaves – 2
Cloves – 4
Cinnamom – 3-4
Ginger garlic paste – 1 tsp
Onion – 3 Sliced
Green Chilli – 3 nos
Oil – 3 tsp
Ghee – 2 tsp
Curry & Coriander leaves  - for garnishing
Salt – to taste
Water – as required

Method:
Soak Channa overnight and keep them.
1. Take a pressure cooker and add oil.
2. Add the cloves, cinnamom and bay leaves.
3. Now add the sliced onions, sliced green chilli and also the ginger garlic paste.
4. Sauté them until the raw flavor fades.
5. Now add the Potato cubes and the channa.
6. Add the raw rice directly without soaking in water or without washing it.
7. Mix well and add ghee (if you are diet conscious you can add gingelly or sesame or til oil) and saute.
8. Now add the required salt and water.
9. Mix well and allow the rice to cook for 2 whistles.
10. After steam subsides, open the cooker and garnish with the curry and coriander leaves.
Serve hot with Raita.
Note: Adding gingelly oil in good for health and helps the rice to come well (non-sticky).

Ingredients:
Boiled Rice – 1 cups
Cooking Rice/Raw Rice – 1/2 cup
Toor, Channa and Urad dhal – each 1/4 cup
Pepper -1 1/2 tsp
Jeera – 1 tsp
Dry Red Chili – 3-4 nos
Green Chili – 2-3 nos
Asafoetida – 1/4 tsp
Salt – to taste
Curry and coriander leaves -1 cup
Pepper Jeera Adai

Method:
1. Soak all rice and dhal together for 2-3 hrs.
2. While grinding, first add pepper, jeera, chili, curry n coriander leaves and grind a bit and then add the rice-dhal soaked, asafoetida and salt.
3. Get them grounded to a fine batter.
4. Prepare fine adai dosai and serve with jaggery.
This pepper and jeera adai is very suitable for winter and rainy season as pepper helps protect from cold and jeera helps for easy digestion.

Ingredients:

Cooked Rice – 2 Cups

Onion – 1 Sliced
Ginger Garlic Paste – 1 tsp
Carrot – 1 sliced

Mustard – 1 tsp
oil – 3 tsp
Salt – to taste

To Grind:

Mint leaves – 2tbspn

Coconut – 2 tbspn
Green chili -3 nos (according to your taste)

Roasted Urad Dhal – 3 tsp

Method:

1. Take a pan, heat oil and add mustard. Allow it to splutter.

2. Now add sliced onion and add ginger garlic paste.

3. Saute them until the raw flavor fades.

4. Now add carrot and add very little water for the carrot to half cook.

5. Take mixer and ground the ‘to grind’ items to a fine paste adding little water.

6. Now add them to the cooking pan and leave them for few mins until the raw flavor fades from the ground paste and the mixture becomes thick.

7. Add the required salt.

8. Finally add cooked rice and mix well and garnish with coriander leaves.

If serving for kids, you can add a spoon of ghee before serving. That will enhance the taste of the easy mint or pudhina rice.

Ingredients:

Capsicum – 4-5 nos (Can take all colors also)
Rice – 1 cup
Water for cooking rice – 2 cups (as required)
Onion – 2 nos
Garlic – 5-6 cloves
Tomato – 2 medium sized
Turmeric powder – 1/4 tsp
Red Chili powder – 2 tsp
Coriander powder – 2 tsp
Garam Masala – 1/2 tsp
Mustard – 1 tsp
Oil – 3 tsp
Salt – to taste

Method:

1. Heat oil in a pan add mustard and allow it to splutter.
2. Add sliced onion, garlic and chopped tomato and fry until raw flavor fades.
3 . Now add the rice (soak in water for 10-15 mins) and fry in that oil mixed onions.
4. Add chili powder, coriander powder, garam masala, turmeric powder and salt and finally add water.
5. Pressure cook the rice and keep it aside. It will look like plain masala rice.
6. Now take a tawa, add little oil and add the sliced capsicum and add a pinch of salt.
7. Saute for few mins and add this to the cooked masala rice and mix well.
Serve hot with little ghee and corinader leaves.

Vegetable Fried Rice

ORIGIN:
"Fried Rice" or Vegetable Fried Rice is a popular north indian dish(main course item).Its main ingredients are rice (which is rich in carbohydrates) and vegetables like carrot (rich in vitamin A),beans (rich in proteins) and Capsicum (rich in Vitamin C) .It is quite a healthy dish.It is widely preferred by youngesters in the modern world.

INGREDIENTS of Vegetable Fried Rice

Raw rice - 200 gms.

Water - 2 cups.

Beans - 50 gms.

Capsicum - 1

Carrot - 1

Ghee - 2 tbsps.

Cloves,Cardamom - 2 tsps.(together)

Biryani leaves - 2

Green chillis - 2

Coconut pieces - 1 tsp.

Cashew nuts - 4

PROCEDURE for Vegetable Fried Rice

Step 1:First of all wash the raw rice in clean water and drain the water.

Step 2:Add 2 cups of water to the 1 cup of rice and cook in a pressure cooker for 15 minutes.

Step 3:Keep the cooked rice aside.

Step 4:Chop all the vegetables like beans,green chillis,capsicum into small thin pieces.

Step 5:Grind the cloves,cardamom to get a dry powder in a mixer-grinder.

Step 6:Fry the cashew nuts in ghee and keep it aside.

Step 7:Fry the chopped vegetables with oil,salt,biryani leaves and the clove - cardamom powder in a pan for 10 minutes.

Step 8:Now,add the cooked rice to the same pan and fry for 2 minutes and mix well.

Step 9:Garnish with ghee fried cashew nuts.

NOTE you Should Know

*Please use the ingredients in the above mentioned quantity only.

*Do not grind the biryani leaves with cloves and cardamom.

*Do not forget to remove the thick skin of cardamom.

Chappathis Recipe

Chappathis (Indian Bread)

ORIGIN: "Chappathis" are a typical day to day dish in the north india.Its main ingredient is wheat rich in carbohydrates and less in sugar content.Usually chappathis are taken as a main dish with some gravy or curry as the side dish.
Doctors recommend chappathis instead of rice.

INGREDIENTS of Chappathis Recipe

Wheat flour - 400 gms.
Oil - 2 tbsps.
Water - 1 cup.
Salt - 1/2 tsp.
Ghee - 100 gms.

PROCEDURE of Chappathis Recipe


Step 1:Take a bowl ,add wheat flour ,salt, and mix 1 cup of water with it.

Step 2:Make a dough by mixing well.

Step 3:Now,size the dough into small balls with your fingers.(18 balls)

Step 4:Keep it aside for 1/2 an hour.

Step 5:Then take one ball ,press with all the four fingers till it becomes flate and circular,dip in dry wheat flour(both the sides of the circular plate).

Step 6:Use a roti stick to make a circular thin chappathi with it .

Step 7:Each ball has to be made into a circular chappathi with the roti stick.

Step 8:Heat tava ,add 1/2 tsp. of ghee,put the circular roti on the tava and heat till it turns golden brown.

Step 9:Then turn to the other side and add 1/2 tsp. of ghee and heat till it turns brown (light )

Step 10:Repeat it for each chappathi.

Step 11:Serve hot with gravy or curry.

NOTE:


*Please use the ingredients in the above mentioned quantity only.

*Do not heat the tava on high flame.

*Do not add too much ghee or oil to the tava as the chappathi will become hard.
